Pork Chops with Cheesy Scalloped Potatoes 

4-6 boneless pork chops
salt & pepper
1 box Scalloped Potatoes
2 cups boiling water 
2/3 cup 1/2 & 1/2
3/4 cup shredded Cheddar cheese
1/3 cup green onions (optional)
5 slices cooked crispy bacon crumbled (optional)
 
Heat oven to 400.  In skillet brown pork chops and season with salt & pepper.
Spray a 2 1/2 quart casserole with cooking spray.  Stir sauce mix from potato bad, boiling water & 1/2 & 1/2.  Whisk well
Stir in cheese, potatoes & green onion
Place browned pork chops on potatoes in casserole.
Cover and bake 30 minutes. Uncover and bake another 10 minutes until potatoes are tender and chops are no longer pink.
Cover and let rest 5 minutes.
Sprinkle with crumbled bacon.
